Hey guys! Long time no blog eh? Well I’ve been away on holiday for a couple of weeks in Barbados which was just so relaxing and perfect. Just what I needed. It was safe to say I missed home by the end though, nothing like routine, loads of broccoli and my protein baking I must say Since then I’ve just been getting back into my usual routine, back in the gym and getting on with the dreaded uni work in time for going back at the end of this month. Totally dreading it but there we go. Last year finally!
Anyway, I’d been wanting muffins all holiday. I don’t know why, but I just love muffins more than anything. They’re like a cake but better, and my ultimate fave way to eat them – with nut butter. Gahhh so good! So since I’ve been back I’ve made several batches of muffins to satisfy that craving that was there for a whole 2 weeks haha so I thought I’d share one of my new faves; these lemon and blueberry muffins. Not my usual flavours I admit. I love blueberries but ummm lemon, I normally pass on and I normally go for the whole chocolate/toffee/caramel/cinnamon flavours but these are really yum and a nice change for me
I made them into mini muffins because I have this new mini muffin silicone tray and they’re so cute! But you can make them into normal ones if you prefer
Lemon and Blueberry Protein Mini Muffins
(Makes 12 mini muffins)
1 scoop vanilla whey (30g)
1/4 cup coconut flour
1tsp baking powder
1/4 cup GF oats (ground into a flour)
Zest of one small lemon
Heaped 1/2 cup frozen blueberries (or normal blueberries)
3/4 cup liquid egg whites
1/4 cup quark (could sub with greek yogurt)
Preheat the oven to 180 degrees Celcius. Mix together the vanilla whey, coconut flour and baking powder in a bowl. Take your oats and ground them in the food processor to make a flour. Add to the dry mix. Finely grate the lemon into the bowl and fold in the blueberries so that they are coated in the dry mixture. Add in the liquid egg whites and quark and mix until well combined. Spoon the mixture into a silicone muffin pan and bake for around 12 minutes.

36 cals, 4.5 protein, 3 carb, 0.75 fat
