I’m going to be really British and mention the weather but wow, it’s bloody lovely! Make sure you all drink plenty of water though guys, I’ve been getting headaches and waking up really dehydrated so I’m upping my water intake.
Yesterday afternoon after a wander in the sun I got back home and opened the french doors in my apartment and decided I wanted cookies because um, cookies are amazing So I came up with this little recipe. The ones I made are not overly sweet as my sweet tooth can seriously take over and make me overeat once it gets a taste, but you can adjust accordingly. They tasted more nutty from the flax if anything which I really liked
Protein Cocoa Flax Cookies
(Gluten and Dairy Free)
1/2 cup pea protein (I used Pulsin’)
4 tbsp gluten free oats
2 tbsp coconut flour
4 tbsp ground flax
2 tbsp coconut sugar (can substitute with preferred sweetener, honey would be nice! And add more if you want a sweet cookie)
1/2 cup liquid egg whites
Optional add ins: nuts/seeds/chocolate chips
Pre-heat the oven to 180 degrees Celcius. Put the dry ingredients into the food processor, then add the liquid egg whites and blend together until well mixed. Bake in the oven for 10-15 minutes (mine took 12).
