Hey people! I’m back again. Sorry for the absence but I have finally just finished moving and settling into my new home! I tell you what though…moving home is one hell of a hard workout! Lugging suitcases to and fro from my old place, I was sweating buckets! I was so excited to get some food in my new home finally.

Probably something to do with the weather right now. So bloody nice! Fortunately for me I live not all that far away from the coast so I’ve been having a few evening walks on different beaches.
Which also make for nice sunset drives when I’m coming back. My favourite time ever to be in the car just driving on my own with the music on
In terms of training, well still plodding on. I am really enjoying my strength training right now actually.
I’m making progress and having gains more regularly recently so it definitely keeps me going and pushing myself. Even my weaker areas are catching up with the stronger areas so it shows that the nutrition side of things is probably starting to work All good stuff.
Baking wise, well I did promise I’d start sharing things with you guys as I know I’m teasing you all on Instagram – sorrryyy! So, I’ll get to it. I’ll start off with this protein cinnamon bread because it is delicioussss and I have nailed the bready texture of my breads right now which is cooool. How? Well I use psyllium husks. Amazing for breads/wraps etc without the need for wheat/gluten and full of fibre to keep you full as well as great for digestion if you have problems there which is why I like it so much being gluten free with tummy problems and a love of protein baking!

Protein Cinnamon Bread
1/4 cup vanilla whey
1/4 cup coconut flour
1 tbsp psyllium husks
1 tsp GF baking powder
1.5 tsp cinnamon
1 cup liquid egg whites
Simply mix the ingredients together in a bowl and put mixture into 2 silicone mini loaf pans. Cook at 180 degrees Celcius for 25 minutes.
- This is a bread texture so is recommended that you put a spread on – almond butter is my choice! But coconut oil, butter, greek yogurt, peanut butter…anything is good also
- Slice up with a bread knife as you would do with bread
- Liquid egg whites – I get mine in bulk from Bulk Powders but you can also buy Two Chicks cartons in supermarkets. Great for protein baking..seriously couldn’t live without them!
- You can add in raisins if you want cinnamon raisin bread or anything you like really!
