Crunchy Falafel & Fave Snacking

Happy Sunday! Urgh now that I am back at uni I can see why people think the weekend comes to an end so soon. After my brother got to my place early yesterday meaning I had to be up early too, today was definitely a monster lie in day after a full week of no lie ins for me. This has been unheard of for like 5 months now in my world!

Anywaaaay. Today as promised I have a nice little recipe for you! After my first day on Monday, I suddenly felt inspired to get creative in the kitchen. Maybe going back to uni is good for me hey?! I had no plans of what to make really. I did have in mind something sweet but then umm things just kind of changed as I threw things into my food processor and it turned out savoury! It was probably the taste of the roasted bombay chickpeas I’d just had as the recipe turned out to have curry powder in…an ingredient that I actually use pretty much everyday!

Crunchy Curried Red Lentil Falafel (Vegan, Gluten Free)

Ingredients (serves 1 – makes 10 small falafels)

 1/2 cup dried red lentils

1 tbsp coconut flour

1/8 cup almonds

½ tbsp curry powder

1 tsp baking powder

¼ cup + 1tbsp water

Pre-heat the oven at 180 degrees Celcius. Put the dry ingredients into the food processor and grind until combined. Add the water and mix until you get a falafel dough. Line a tray and roll the dough into equal sized falafel balls. Bake for 10-15 minutes until they are crispy.

These were perfect for my lunch the next day with some hummus as dip with my salad. You could also serve with pitta, with yogurt dip or they’d be great as a savoury snack :) If you are wanting a soft falafel then these aren’t – they are crunchy from the almonds which personally, I love as I love a good crunch with anything!

I made some more of these today for uni tomorrow so I’m already excited for my lunch tomorrow haha! Also yesterday I received another Nutribox as I won their competition so I have plenty of snacks to keep me going this week for my long days woohh!

Think I’m going to take in my personal faves tomorrow to make Monday extra yummy to cheer me up. I absolutely love the Miss Wallflower Candy energy cookies, Bounce Spirulina ball and Beond acai berry ball <3_DSC0539

And speaking of snacks, I may have made a little *ahem..* order of inSpiral kale chips to really cheer me up weeee!!!!

Ah well, at least my food will be exciting this week even if my work isn’t :P

    those falafels look so great! I definitely will be making them soon :) i often make kabocha squash falafel patties that you’d obviously love :) i should do a post on the recipe soon!
    my favorite snacks as of late are vega vibrancy bars, health warrior chia bars- (so good!) and baby carrots dipped in peanut butter

  2. Oh man, those falafel balls are a great recipe for me to bring to work. I usually put store-bought veggie patties on top of my salads – this one would be a nice alteration. Thanks!

  4. I’m kind of embarrassed to admit that I’ve never had falafel. They look delicious though, and soooo easy to make, so I really have no excuse not to try them… other than the fact that I get stuck in food grooves and don’t end up eating anything new for months ;) As for favorite snacks, lately it’s been pretty simple things like yogurt messes and bananas with AB. I’ve also been doing some baking, so oatmeal cookies have been sneaking their way into my life on numerous occasions :mrgreen:

  8. Yum! This sounds so good. I’ve made your houmous falafel before and they were amazing, so I’ve got high hopes for these! At the moment I’m loving dates dipped in peanut butter as a snack!
