Usual Life and Amaretti

Haiiii lovies! Long time no um..see? Kinda anyway :)

Life for this blogger has been the usual recently; gym, work, eat and eat some more I guess!

At the moment I am trying to finish my uni work before Christmas as I have a deadline at the start of January. I don’t go back until the middle of January so I am definitely going to make the most of this time. I have been dreading going back all year. To be back in that environment surrounded by beautiful girls who are all amazing talented really isn’t something I look forward to. I’ve been quite liking being in my own little bubble away from that stress since I stopped working in London earlier this year really. Ah well c’est la vie eh?!

Fitness wise I am still planking first thing when I wake up which I do love doing. Today I even reached the longest time of 4 mins 46 secs but I will be a happy bunny when I can get over 5 minutes. I don’t like doing much ab work but I prefer working on my core through planking along with making sure I’m working my core whilst doing my cardio and weights. It’s a much easier way for me when I can include it in exercises I already like doing. Then when I’ve been hitting the gym I’m still doing my weights but I’ve upped my cardio as I think maybe doing weights everyday was too much for me personally.

Food wise, a new find which I loooveee…

I also recently ordered a bulk bag of dried white mulberries. They are my fave dried fruit by far and these have been going down every single day…

…Along with the usual Nicky style dinners of course! Always nice and hot and steamy to warm me up :) Roasted kabocha, curried tempeh with broccoli and roasted sprouts in coconut oil (kinda obsessed with these vegetables at the moment). As far as tempeh goes, well of all proteins, my favorite has to be seitan but obviously I can’t have that anymore being gluten free. I really do miss it…but then now I’d say quorn is my fave. Tempeh is okay for a change but I do find the texture kinda weird still!

I’ve also been living in my hoody because it’s so frickin cold!

Oh and with all these cookie recipes going round the blogging world at the moment I decided last night to get my bake on as opposed to my usual recent un-bake on. I was going to go for ginger/cinnamon cookies or something but then I thought about other things I really like and it came to me biscotti! I have been eating almonds like it’s my job recently and biscotti was an obvious link to my current obsession. Then I thought about when I was younger and I used to love those ‘little biscotti’s’ as I called them – more commonly known as amaretti. Tadaaa my over-thinking brain finally got an answer! And what’s more is that they are nice and simple to make - just the way I like it :)

Then I had to think about what to do in terms of making them as I don’t have sugar around anymore as I have been making mostly raw stuff but then I did have powdered stevia (Truvia) so I could make sugar free ones…

Amaretti (Gluten and Sugar Free)

(makes 15 amaretti)

125g ground almonds

1 tbsp gluten free flour

40g powdered stevia (Truvia)

2 medium egg whites

1/2 tsp almond extract

Pre-heat the oven to 180 degrees C. Mix the dry ingredients together in a bowl. In another bowl whisk the egg whites until soft peaks form. Add the egg whites and almond extract to the dry ingredients and mix until combined. Roll the dough into equal sized balls and drop onto a lined baking tray. Slightly flatten the balls to make a round disc shape. Bake for 25-30 minutes.

These are perfect on a cold evening with a cup of tea…or in my case earlier on with coffeeeee!

    Mulberries are super delicious, aren’t they. I just stumbled across them the other day and am quite addicted. They’re my new favourite (a break from goji berries).

  2. I love mulberries, they are quite hard to come by though! I am addicted to medjool dates though they are my all time favourite!

  8. Ohh, I love dried mulberries!! Where do you order them online from, if you could please link me?
    We have a mulberry tree, we should have tried drying them for the bountiful amounts we harvested!
