Raw Christmas Cinnamon Cookies

Happy Thanksgiving to all my American readers! Kindaaa wish we had something to celebrate over here in the UK today but oh well..since I have not been gearing up for Thanksgiving, I have already been getting ready for Christmas!
Okay maybe not really in terms of presents which I should really start soon eek (definitely avoiding starting that one, so stuck!) but already thinking about Christmasy foodie things I want to make! Whenever I go home I always try to sneak in a bit of ‘Nicky’ food as well as our usual family food around the Christmas period. Last year I opened my family’s eyes up to cashew cheese! I admit it is always a challenge trying to convince them of my ways but they always give it a go and seem to enjoy it…andddd then go back to their usual foods!

So I started off experimenting this week with a good old cinnamon cookie, raw style

These cookies say ‘Nicky’ all over them, containing pretty much all of my favourite ingredients (except lucuma and squash!); almonds, dates, cinnamon, maple syrup and coconut oil. Nice and simple.
Ingredients (makes 6)
1 cup of almonds
10 smallish dates
1 tsp ground cinnamon
1/4 cup maple syrup
2 tbsp coconut oil (melted)
Ground up the almonds in the food processor until they form a flour. Take out and leave the flour aside.
Put the dates into the food processor and make a paste. Add the cinnamon, maple syrup and melted coconut oil to the paste and mix.
Add the almond flour half a cup at a time to the liquid mix until a dough is formed.
Using a scoop, and rolling the dough in your hands, slightly flatten the dough into 6 equal sized discs onto a teflex sheet and dehydrate for at least 24 hours, turning over after 12 hours to help them for a soft cookie (longer if you want a crunchy one!).
Of course you can have these just not for Christmas because you can’t go wrong with a cinnamon cookie anytime of the year ..:)
