Pink Skies, Knitwear and Granola for Fall

Woah there..Friday?!

This week has just been weird. I’ve basically spent the whole week in bed because I got really quite unwell. It was quite scary but today I finally feel like I’m back on planet Earth and right now I’m looking at the gorgeous evening pink sky.

Just another reason why I love this time of year so much…

And now that it is officially Autumn (Fall for you US readers!), I decided to go back to my love of knitwear :)

Whilst I still haven’t been that inspired to bake despite the cooler temperatures, I did decide to put my oven on and make some granola for a change! I was inspired by Love Grown’s Granola as I recently purchased some and remembered that a while ago I had the chance to try a different of their flavors, a cinnamon raisin one which had almonds and coconut in too and it was just yum!

Cinnamon Raisin Almond Granola (GF option)

Ingredients

  • 4 cups oats (or gluten free oats)
  • 1 tsp salt
  • 1 Tbsp cinnamon
  • 1 tsp ground ginger
  • 1 ½ cups unsweetened coconut chips
  • 1 cup almonds
  • 1/3 cup melted coconut oil
  • 1/3 cup agave nectar
  • 1 cup dried raisins (leave out until the end)

Mix all together well and bake in the oven at 180 Degrees Celcius for around half hour, stiring occasionally so it toasts evenly. 
Then add 1 cup dried raisins.

This is pretty much amazing given that it has my fave flavors in there!! :)

  1. Granola is so great. I made my first one a few weeks ago and loved to add a lot of dried fruit – especially cherries!

    And your pullover is great – I love the pattern. Have to get some autumn-wear for myself.

  4. I remember the first time I made granola, I put the raisins in too early and they came out AWFUL! haha oops! I’ve since learned ;) your recipe looks amazing!

  6. Hope you’re feeling better! Sometimes a day in bed and Autumn-ish granola is all you need (maybe not all you need but it certainly helps :) ).
